I’ve been blogging, sharing my family’s journey to simplify natural living and real food, for over two years now!  While I love blogging and social media, I believe the online world can often lead to one downfall within our lives…the constant quest for perfection.

Maybe perfection isn’t the right word. More like the quest to always have the three course dinner every single night that’s perfectly styled like a Pinterest photo. Sometimes this quest shows up in the form of guilt for not doing “enough.” That, my friend, is what I’m talking about. Maybe I’m the only one who feels the burden (particularly after scrolling Pinterest) to do more, cook more, and decorate more.

See, there’s nothing wrong with any of those things, or the online world (in fact, I love blogging and Pinterest), but in the midst of constant social media and pretty blogs with fancy meals, it’s easy to forget that dinner can be a simple batch of blender pancakes and oven-baked bacon, maybe add watermelon slices on the side. Or just go for the pancakes and watermelon. Dinner can be as simple as cooking a whole chicken in the crock-pot and dicing up potatoes for a quick roasted side.

I regularly find the need to sit back during my meal planning time and remind myself: Real food isn’t about fancy meals. Real food is about nourishing my family!

Simple doesn’t mean the delicious factor must suffer. In fact, some of our favorite meals, the simplest of all recipes, are packed with more flavor than a complicated meal from a fancy restaurant. The key to creating delicious and simple meals is quality. And when you’re purchasing or growing real food, you know quality isn’t going to be an issue.

Today’s simple recipe demands only four ingredients and doesn’t require a single fancy tool–other than a knife and sheet pan. The natural flavors of real food combine to make these 4-Ingredient Perfectly Roasted Potatoes a family favorite. This recipe is also super versatile–a quality I love about simple real food. I usually try to double this recipe so I’ll have extra potatoes leftover to dice in the morning and add to an omelet, or just sauté on the side of scrambled eggs.

Without further ado, let’s get back to the simplicity and flavor of a classic side dish like potatoes. Get your fork ready, because these roasted rosemary potatoes are simply perfect.

4-Ingredient Perfectly Roasted Rosemary Potatoes

Servings 3 -4 side servings

Ingredients

  • 6-8 medium red potatoes halved and then quartered (gently scrub the skins to remove dirt)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 TB chopped rosemary
  • 4-5 garlic cloves crushed, Place the garlic on a cutting board and crush them with the back of wooden spoon-this helps unlock the flavor and fragrance.
  • 2 TB extra virgin olive oil or avocado oil

Instructions

  1. Preheat the oven to 425F--this is the secret to crispy potatoes!
  2. Place the potatoes on a greased large sheet pan. Sprinkle the potatoes with salt and pepper. Add the crushed garlic and rosemary. I usually add 1-2 whole rosemary sprigs, cut in half, for the extra fragrance--this is optional. Drizzle the olive oil over the potatoes, then toss with your hands until the potatoes are coated with oil.
  3. Position the potatoes in a single layer so the skins are facing up (yes, some of the flesh of the potatoes will also face up since the potatoes are quartered).
  4. Bake for roughly 30-35 minutes (keep an eye on the potatoes at the 25 minute mark), until the potatoes are soft on the inside (try piercing one with a fork) and crispy on the outside.
