Made with homemade pizza dough, homemade pizza sauce, topped with ooey-gooey mozzarella, and finally loaded with mounds of garlicky-kale salad. It’s a healthy pizza party in your mouth! Even the biggest kale skeptic will be tempted to take a bite out of this delicious and nourishing pie.
Preheat the oven to 475F. Place the baking stone(s) in the oven during the preheating phase.
Roll out the pizza dough (this recipe makes two medium-large round pies). I've found having a silicone baking mat makes this process simple and mess-free.
Pull the baking stone(s) from the oven (they will be hot!), carefully lay the dough across the stone(s). Top with pizza sauce and shredded mozzarella cheese.
Bake the pizzas for 15-20 minutes until cheese is melted and bubbly.
While the pizza bakes, place the chopped kale in a large bowl.
Mix together the dressing: lemon juice, olive oil, salt, and garlic, in a small bowl.
Pour the dressing over the kale. Massage the kale with your hands for a couple of minutes until the kale is reduced in size by half. Add the fresh basil and parmesean cheese, mix together.
Remove the pizza from the oven. Allow the pizza to cool for a couple of minutes, top the pizza with the kale salad (and extra parmesean) and enjoy.
