Here is our family’s meal plan for this week. I only plan breakfast and dinners as we tend to eat leftovers for lunch or stick with simple sandwiches and fruit and veggies. Breakfast is in orange and dinner in blue. Links for some recipes are provided.
Snacks: Fruit and veggie slices, Fruit and veggie smoothies, Homemade Lara Bars, cheese and Mary’s Gone Crackers.
|Scrambled Eggs with homemade zucchini muffins (make ahead on Sunday)||Soaked oatmeal with bananas and berries and chopped walnuts with maple syrup and raw milk||Omelet with veggies and cheese with homemade strawberry jam and real butter||Homemade Granola with plain whole milk yogurt, bananas and berries with raw honey||Smoothies:(Chocolate peanut butter: unsweet cocoa, peanut butter, ½ avocado, spinach or kale leaves, honey, yogurt, and 2 bananas) with toast and real butter||Soaked biscuits with fried eggs and berry, banana, and kiwi fruit salad||Homemade banana pancakes with chopped walnuts and almonds sprinkled on top while cooking with real butter and maple syrup and orange slices|
|Southwest Stuffed Bell Peppers (made with brown rice) with roasted broccoli and mango, banana, orange salad||Quiche with Yogurt Crust (add in finely chopped basil while making crust): sautee’ mushrooms, onions, and 7 handfuls of spinach, place on top of crust, add feta cheese, and top with egg mixture: 3 eggs, 1 cup grass-fed cream/milk Green salad with homemade dressing||Cuban style black beans, served over lettuce with toppings: avocados, red onions, sour cream, tomatoes, cilantro, and shredded cheddar cheese with corn bread on the side||Veggie Spaghetti with chopped zucchini, mushrooms, and bell peppers in homemade spaghetti sauce over whole wheat spaghetti noodles and green salad with homemade dressing
||Pizza: Kale and Cheese Pizza, sautee kale leaves with minced garlic, place over sauce on pizza crust and top with mozzarella with green salad with homemade dressing and strawberries||Soup Night: Chicken Soup and baked sweet potatoes with real butter and cinnamon||Stirfry with cabbage, carrots, mushrooms, spinach, cooked in GMO free soy sauce, honey, grated ginger, and a minced garlic clove served over brown rice|
