A Note from Kristin

Confession: When Tammie came to me with a coconut milk sundae, nostalgia and serious cravings kicked-in! I've been busy eating this decadent, healthy treat ever since. Thank you, Tammie for sharing such a great summer treat here at Live Simply.

When I was a young girl, one of my favorite things to do was go down to the local convenience store and get fat-free frozen yogurt from the soft serve machines.

Oh, sometimes I really wish I could go back and tell that young girl who was worried about being overweight some of the things I now know about nutrition. I remember being able to fill the cup or cone as high as possible and still pay for that size of cup. As long as it didn’t fall over all was good.

It’s no wonder I had such a struggle with my weight and such an addiction to sugar. I have since learned that when the industry takes the fat out of something it doesn’t taste near as good, so companies add lots and lots of sugar to make it taste better.

I would have been better off with full fat than all that added sugar. For one thing, I know I could not have eaten near as much because fat is…….well, filling. And we all know that sugar is just empty calories with no substance, so you can eat lots but it actually will make you gain more weight than healthy, filling good fats.

I know that now, and since I can’t go back and teach my younger self, I’m doing the next best thing – I’m teaching my kids! I give them plenty of healthy fats and we try not to overdo sugar, especially processed sugars. So far not one has had to deal with weight issues like I did and they aren’t little sugar addicts either.

I also don’t have to worry about my weight anymore and all of us enjoy healthy full fat treats like homemade coconut ice cream with rich berry and caramel sauce. I hope you will enjoy it too!

Coconut Berry-Caramel Ice Cream

Coconut ice cream with a berry and caramel sauce.

Ingredients

Instructions

  • Take one can of coconut milk (both cans if you want it to be really thick) from the fridge and turn upside down. Punch two holes in the top with a punch can opener. Pour the liquid into an ice cube tray. Place the can(s) back in the fridge and the tray in the freezer until frozen.
  • Once froze open the tops of both cans of coconut milk and pour/scrape contents into blender. You should have some good thick creamy stuff in the cans because it’s been in the fridge, there will also be some liquid in the can you didn’t punch open before.
  • Scrape the seeds out of the 2 vanilla beans if using. Add that to the blender along with the stevia.
  • Next add the frozen coconut milk cubes to the blender. Blend until smooth. (If you have a high speed blender do not blend above speed 2 or 3 because coconut milk tends to separate at too high of speeds.)
  • You may now just spoon the soft serve from the blender into Sunday glasses or if you really want it like soft serve you can spoon it into a large baggie and cut the corner and then pipe it into the glasses. Drizzle the berry syrup and the caramel sauce over each glass of ice cream.
