Pinterest is a community of overachieving women (and I’m sure men too). Pinterest is where you can find links from all over the web which people post and re-pin making it a great place to find new recipes and inspiration. Pinterest also drives me batty. See, lots of recipes are pinned with catch phrases: “healthy”, “good for you”, “homemade”, yet when the recipe is clicked, you find it’s nothing more than processed food ingredients. Oh the frustration.
Last week I found a recipe for chocolate dipped bananas. The thought made me drool. Good thing I spend most my day with a three-year-old and teething toddler, drooling is considered a completely acceptable behavior. I clicked through to the recipe only to find, yup, processed ingredients. Darn.
Why destroy a perfectly nourishing banana by dipping it in a bunch of chemicals? I was still drooling over the idea of chocolate dipped bananas, so I set out to make my own. I knew I could make a tasty and nourishing version. We are talking about chocolate here, how could it be anything less than nourishing and tasty?
I bring you chocolate covered bananas on a cute little stick. The ingredients are simple, real, and super nourishing! Yes, chocolate can be nourishing.
Chocolate Banana Pops
- Cut the bananas in half and carefully insert one popsicle stick (or straw) in bottom of each banana. Place each banana on a tray that is lined with parchment paper and place in the freezer.
- Keep in the freezer until they are frozen, a couple hours.
- While the bananas are freezing, mix the chocolate dip. Whisk until all the ingredients are smooth. This can sit on the counter while you wait for your bananas to finish freezing.
- Once your bananas are frozen take them out of the freezer. Pour the Chocolate Dip into a mug or large measuring cup (like this). Dip each banana into the chocolate dip. When the coconut oil comes into contact with the frozen banana it will cause the chocolate dip to instantly harden creating a chocolate shell. Pretty awesome chemistry. If you desire toppings, now is the time to sprinkle nuts or shredded coconut over the chocolate.
- Lay your bananas on the parchment paper once the chocolate hardens.
- Keep banana pops frozen.
- Note: If you desire a thick chocolate shell, follow the steps above, don’t add extra toppings just yet. Place the chocolate bananas back in the freezer, freeze. Remove from the freezer and repeat with the dipping process, add toppings as desired.
